lemon crepes with marinated strawberries and sour cream and mint sauce


INGREDIENTS (FOR FOUR PEOPLE)

Crepes:
100 g flour
1 pinch of salt
lemon
1 tablespoon vanilla sugar
300 ml milk
3 eggs
50 g of liquid, warm butter
Oil, butter or clarified butter for frying

Strawberries:
250 g strawberries
20 g sugar
few drops of lemon juice
some icing sugar to taste

Sour cream and mint sauce
150 g sour cream
50 g cream
Argan oil 1 tsp
2 tablespoons powdered sugar
A few drops of lemon juice
1 teaspoon freshly chopped mint

AND HERE’S HOW:

Crepes:
Mix the flour with a pinch of salt, lemon zest and vanilla sugar in a bowl. Stir
well with half the milk smooth, stir in the remaining milk with the eggs and
finally add the liquid, warm butter. Let the dough rest for 30 minutes at best.

Bake at low heat in a pan with butter, light brown crepes.

Strawberries:
Wash the strawberries . A third mix with the sugar and press through a sieve.
Season with a few drops of lemon juice and some powdered sugar and mix with
remaining strawberries.

Sour cream and mint sauce
MIx the sour cream with cream and argan oil to a smooth, stir thick sauce . add
powdered sugar and lemon juice and add the mint.

Before applying heat the crepes in a pan if needed again shortly after and after
and with the strawberries and sour cream and mint-Auce on dessert plates.. Dust
with icing sugar.
